Savory Swiss Steak w/ Rice: Date Added: 29 Jul 2011

8 ounces boneless beef round steak, 3/4-inch thick
1 tablespoon flour
1/4 teaspoon salt
1/16 teaspoon ground black pepper
1 tablespoon vegetable oil
1/4 cup chopped onion
1 8-ounce can seasoned stewed tomatoes
1 cup beef broth
1 teaspoon Worcestershire sauce
1/4 teaspoon Italian seasoning, crumbled
1/3 cup sliced carrot
1/3 cup sliced celery
1 small zucchini, cut into strips
1 cup hot cooked rice

Cooking Instructions

Servings: Makes 2 servings

1. Cut beef in two pieces. Combine flour, salt and pepper; pound into steak. Cook meat in oil in medium skillet until brown. Drain fat.
2. Stir onion, tomatoes, broth, Worcestershire sauce and Italian seasoning into skillet. Cover and simmer 35 to 40 minutes.
3. Add carrot and celery; cover and cook 5 minutes. Stir in zucchini; cover and cook 5 minutes, or until meat and vegetables are tender. Serve over fluffy rice
